The Burren Gold Cheese at Aillwee Story continues to be told for over 30 years. From April to October, Diarmuid, our cheesemaker makes 70 Kilos of beautiful semi soft farmhouse Gouda every day. The milk that produces our award-winning cheese has always come from the same Freisian herd at Davoren’s of Caherconnell, just a stone’s throw from Aillwee Mountain. Diarmuid is a man of many talents – he not only makes the cheese, he also milks the cows! How’s that for a Farm to Fork triumph!! Using traditional Farmhouse cheese making methods, there are six flavours of Burren Gold – plain, smoked, black pepper, cumin, piri piri and our ever popular, garlic and nettle. Burren Gold is available every day to sample for yourself in our Farm Shop @ Aillwee. If you are lucky enough, you may even see Diarmuid producing the goods! Ceád Mile Fáilte.
