St. Tola Irish Goat cheeses are handmade with no additives or preservatives. A natural geotritum mould rind grows as the cheese matures (synthetic rinds are never used) to protect the cheese and enhance the flavour. As in all good artisan cheeses, other natural moulds, usually green or blue, may also develop, but these cause no harm. Many cheese lovers actually look for these moulds before purchasing! The rind can just be removed before the cheese is consumed or used for cooking. Cheese is matured to create different flavours from young, fresh and mild to mature and more pronounced in flavour.
Visiting Our Goat Farm
We welcome tours of all kinds to our beautiful 65acre farm! We are available for school tours for both national and secondary students, university and college students and holiday and vacation trips for all sizes and ages.
Tours can be arranged by appointment Our tour takes approx. 1 hour to 1.5 hrs. and includes a full tour of our working farm. There is a chance to pet our beautiful goats, see them during feeding time and get a better understanding of sustainable farming. A cheese making demonstration is included and a tasting of our gourmet cheeses. At the end of the tour, visitors can visit our Économusée museum and buy cheese in our farm shop.
Tours are available for booking Tuesdays, Wednesdays and Fridays 10.30am, 12.30pm and 2.30pm.
